Ceasar Salad with Chicken
Chicken
Ingredients
- 4 boneless chicken breasts
- Butter or oil
- 1 medium head of lettuce, shredded into bitesized pieces
- 2 hardboiled eggs, quartered
- 1 ripe avocado **
- A handfull of small plum tomatoes **
- 125 g bacon bits
- Parmesan cheese
- ± 300 ml of croutons

- 125 ml olive oil
- 2 ml Worcestershire sauce
- 10 ml lemon juice
- 2 cloves garlic, crushed
- 1 egg
- 5 ml Dijon mustard
- Freshly ground black pepper
Place all the ingredients into a blender and mix.
Method
Salad
- Brush the chicken breasts with oil or butter and grill until done; then cut the meat into 1 cm wide strips and set aside.
- In a large bowl mix the letuce, avocado and tomatoes with the croutons and dressing. Arrange the chicken strips on top, decorate with the egg quarters and sprinkle with Parmesan cheese.

Croutons
- 1 loaf of bread, white or wholemeal (wholemeal has a lower GI)
- Butter or olive oil
- Herbs and/or spices (garlic, onion, chili, oregano, ...)
- Pre-heat the oven to 150° C.
- Slice the bread.
- Mix your favorite herbs and/or spices with the melted butter or the olive oil.
- Lightly brush both sides of the bread with the flavoured oil. Trim the crusts and cut into small cubes.
- Spread cubes on large baking sheet and bake until golden brown, stirring them occasionally.
- Cool and store in an airtight container.
