Chocolate lava cup
(Le moëlleux au chocolat)

Ingredients
- 180 g dark chocolate
- 180 g butter
- 3 large eggs
- 2 large egg yolks
- 120 g sugar
- 100 g cake flour
- 6 blocks white chocolate
Method
- Preheat the oven to 200°C.
- Butter 6 medium-sized ramekins or cups (± 200 ml) and coat with flour; shake out excess flour.
- Melt the chocolate and butter in a double boiler or in a microwave at half power, stirring constantly.
- Beat the eggs, egg yolks and sugar until pale and creamy.
- Gradully add the egg mixture to the melted chocolate mixture; mix well.
- Slowly add the flour, a tablespoon at a time, stirring until smooth.
- Pour mixture into cups - about three-quarters full.
(Note: you can prepare the batter in advance and refrigerate it in the molds to bake it later.) - Place 1 block of white chocolate in each pot and bake until crisp on top, but still gooey inside - about 12-18 minutes.
- Serve hot.
Optional: sprinkle with icing sugar or serve with whipped cream or ice cream or strawberries or vanilla custard.
