Filled Muffins
("Kolwyntjies" in Afrikaans)

Ingredients
- 200 ml milk
- 2 large eggs
- 60 ml oil or melted butter
- 1 cup (??? g) flour
- 10 ml baking powder
- 2½ ml salt*
- Filling of your choice: mince, spinach and feta, fruit, jam, etc.
Method
- Beat the eggs and milk and gradually add the oil.
- Sift the flour, baking powder and salt and add to the egg mixture. Mix well.
- Drop spoonfuls of dough into a greased muffin pan, add the filling and top with a bit of dough.
- Sprinkle with paprika or cinnamon and bake at 180° C until golden.
* add more salt to the dough for a savoury filling if you prefer.
Makes 12 medium sized muffins.
