- 100 g (125 ml) low fat margarine
- 150 g dates, roughly chopped
- 1 x 410 g can butter beans, blended with liquid
- 20 ml vanilla essence
- 2-5 ml rum or almond essence
- 120 g nuts, chopped
- 500 ml high-fibre cereal
- 45 ml cocoa powder
- 125 ml soft brown sugar
- 100 g chocolate (milk or dark chocolate, as you prefer)

Method |

- Place the margarine and dates in a saucepan and gently heat until
the margarine has melted.
- Add the pureed butter beans and stir, breaking up the dates with a
wooden spoon, to make a fairly smooth mixture.
- Add the vanilla, rum essence and chopped nuts; boil for 2 minutes,
stirring to mix well.
- Add the cocoa powder and sugar to the mixture, mix and then add the
cereal. Mix well.
- Press the mixture (± 1½ cm thick) into a greased square
or rectangular container.
- Carefully melt the chocolate and spread smoothly over the date mixture.
- Place the container in the fridge to set the mixture.
- Cut into 3 cm squares when the mixture has set, and store in an airtight
container.
