Ingredients
- 250 ml cake flour
- 2 ml salt
- 5 ml baking powder
- 250 ml whole-wheat flour, e.g. Nutty Wheat
- 250 ml high-fibre cereal*
- 250 ml lower GI oats*
- 125 ml pecan nuts, chopped
- 60 ml sunflower seeds
- 5 ml bicarbonate of soda
- 500 ml low-fat plain or fruit yoghurt*
Method
- Preheat the oven to 180 °C.
- Sift the cake flour, salt and baking powder into a bowl.
- Stir in the whole-wheat flour, the cereal, oats, pecan nuts and sunflower seeds.
- Add the bicarbonate of soda to the yoghurt and set aside for a couple of minutes or until it foams lightly. Stir into the dry ingredients.
- Spoon into a 30 cm long bread pan that has been sprayed with nonstick spray.
- Bake for about 1 hour, or until the loaf recedes from the sides of the pan.
- Tip the loaf out of the pan and leave to cool before slicing.
This bread can also be made in a cast iron pot over an open fire.
Makes 1 loaf.
